Apricot Brandy Cheesecake




Biscuit base:

120 gm. plain biscuits - blend till fine
60 gm. melted butter

500 gm. cream cheese
2 tsp. finely grated orange rind
110 gm. sugar
2 eggs
1 Tbsp. apricot brandy (optional)

glaze:
200 gm. Apricot Jam mix with 2 Tbsp. apricot brandy

Method:

(1) Blend bisuits until fine. Add in melted butter and mix thoroughly. Press into paper cups and let it set in the refrigerator for 30 mins. till harden.
(2) Cream cheese with sugar and orange rind till creamy.
(3) Add in eggs one at a time beating well after each addition.
(4) Add in apricot brandy and mix well.
(5) Spoon mixture into prepared paper cups and steam bake in oven for 30 mins. or till cheese is set. Cool.
(6) Pour apricot glaze on top of cheesecake and refrigerate till glaze is set.
(7) Serve chilled.

Pandan Green Bean Kueh with shredded coconut

This kueh taste like kueh kosui except that it's pandan flavour.




Ingredients:
(A)
150 gm. rice flour
50 gm. Hoen kwee flour
40 gm. Tapioca flour
400 ml. water
1 tsp. alkaline water

(B)- boiled
250 gm. sugar
600 ml. water
1/4 tsp. salt
3 Tbsp. Pandan juice
a little green colouring

1/2 young white coconut )
1/2 tsp. salt ) steam for 8 mins.

Method:

(1) Combine ingredients (A) together and mix well. Mix in ingredients (B) into the flour mixture and strain.
(2) Use low heat to cook the batter until slightly thick. Pour into a 8" square tray and steam with high heat for about 40 - 45 mins. or until cooked. Leave to cool before slicing.
(3) Cut and coat with steamed coconut before serving.

Hokkien Wa Kueh with Bean Sauce

Three Citrus Cream cheese Pound Cake



Ingredients:

180 gm. Cake flour
1/8 tsp. Bicarbonate of Soda
a pinch of salt
130 gm. Cream cheese
160 gm. Butter
225 gm. fine sugar
180 gm. eggs - lightly beaten
1 tsp. vanilla essence
2 Tbsp. Lemon Juice
1 no. Orange Zest
1/2 tsp. Lemon Zest
1/2 tsp. Lime Zest

Method:

(1) Sift cake flour and bicarbonate of soda together and set aside.
(2) Cream butter and cream cheese together for 1 min. then gradually pour in sugar and continue beating till creamy and light.
(3) Pour in beaten eggs in a steady stream till finished. Mix thoroughly.
(4) Add in vanilla essence, orange zest, lemon zest and lime zest.
(5) Fold in flour mixture lightly and then pour into a loaf pan (9" x 4")and bake at 160C for about 1 hour 30 mins.
(6) Insert skewer in and if the centre comes out clean, then it's cooked.
(7) Remove cake from oven for 10 mins. in it's pan before removing frompan.
Cool cake over a wire rack.
(8) Can serve the cheese pound cake with a dollop of vanilla ice cream.

Chocolate Chip & Walnut Cookies





Ingredients:

250 gm. Butter
1 tsp. vanilla essence
125 gm. castor sugar
125 gm. brown sugar
1 egg
320 gm. plain flour
1 tsp. bicarbonate of soda
200 gm. chocolate chips
100 gm. chopped walnuts - coarsely chopped

Method:

(1) Beat butter, vanilla essence, sugar and egg with electric mixer until smooth.
(2) Add in flour and bicarbonate of soda and stir in chocolate chips and chopped walnuts.
(3) Drop level tablespoon of mixture onto trays and bake at 180C for 15 mins. or till golden brown.
(4) Cool on wire rack before storing in cookie containers.
