This is one of my favourites. Aunty, regarding the thousand layer flaky yam mooncake, i baked at 175C for 20-25 mins but seems that in between the layers is not really cook. Do you have any idea what's wrong?

Hi aunty,

I don't know why my pastry skin will cracked when i wrapped my filling ? I have already rest the flour for 2 hour ! I use:-

300gm plain flour
90gm peanut oil
195gm golden syrup
1.5tsp alkaline water

Is it something wrong for the pastry ingredients ?
