I just found your gorgeous mooncakes now, searching for recipes to make the snow skin mooncake I had in Malaysia. All of your cakes look so tasty!
I'm in Singapore now, but i go back to Sydney next week. Do you know if it's possible to get the ingredients to make mooncakes there? And can you recommend anywhere easy to get to in Singapore for someone on crutches to buy a mould?
Go to Sun Lik at 33, Seah Street (NEXT to Raffles Hotel) or go to KWONG CHEONG THYE, they sell a lot of lotus paste, all kinds but I suggest that you should go to SUN LIK first.

Mooncake syrup is not corn syrup or molasses. I have the recipe in my blog. It's very simple to make your own mooncake syrup but you can also store-buy from retail shops.

I tried the mochi flour bought from Phoon Huat but my mooncakes don't look tranparent, my look like snow skin & when put in the fridge, they turned hard.
That is why you noticed I seldom recommend buying ingredients from them. My friend called me last night when she heard about the cheap mochi flour they are selling. She asked the chef how come the mochi mooncake is so hard?? Those that she tried was made by the chef who taught the mochi mooncakes. I bought my mochi mooncake flour from Anna Phua and it's soft and nice. Anna Phua's mochi flour is genuine...

I'm unable to post Anna Phua's recipe without her permission and it's unethical to do that especially when both of us are teaching. I guess you have to get the recipes from her or probably just buy the recipe from her. She can explain in detail to you how to make it and she might let you attend the next mochi class for free cos you bought her recipe.

i tried ur banana cake recipe today! used extra ripe banana, so smells damn good!
but i got a question...
i ran out of cake flour (i only left 150 grams, ur recipe asked for 250gm.), so i replaced the 100grams with all purpose flour. is it okay?
and also, if i reduce the butter by say.. 50grams, is it okay too? :)

change of flour and sub..it's o.k. You can cut down the butter by 50 but it won't be that moist lah. It will become more dry.

If I use Roselle, it's natural colouring. Pandan can be natural too.
Colouring - Wilton is good.

Both shops have equally good lotus paste. I suggest Sun Lik because they have more things there like moulds, cutters, colouring, nuts, etc etc

Hi cookie monster...If it's 58 gm,
for snow skin, use 28 gm skin and 30 gm. lotus paste.
For baked skin - use 20 gm skin and 38 gm. lotus paste.
