Hi,

I just found your gorgeous mooncakes now, searching for recipes to make the snow skin mooncake I had in Malaysia. All of your cakes look so tasty!

I'm in Singapore now, but i go back to Sydney next week. Do you know if it's possible to get the ingredients to make mooncakes there? And can you recommend anywhere easy to get to in Singapore for someone on crutches to buy a mould?

aunty yo,
i tried ur banana cake recipe today! used extra ripe banana, so smells damn good!
but i got a question...

i ran out of cake flour (i only left 150 grams, ur recipe asked for 250gm.), so i replaced the 100grams with all purpose flour. is it okay?

and also, if i reduce the butter by say.. 50grams, is it okay too? :)

thanks in advance. :o)

Aunty Yochana said...

Hi Elaine,

change of flour and sub..it's o.k. You can cut down the butter by 50 but it won't be that moist lah. It will become more dry.

Hi Arwen,

Go to Sun Lik at 33, Seah Street (NEXT to Raffles Hotel) or go to KWONG CHEONG THYE, they sell a lot of lotus paste, all kinds but I suggest that you should go to SUN LIK first.

Anonymous said...

Yeah, these are the kind that I'll probably won't stop eating if I could get my hands on one... just love these chewy textures..
One question about mooncake syrup: is store bought dark corn syrup OK or regular syrup? Anita

Hi,
it is such a shame for overseas fans for your bakeries not to get the chances to attend and learn from you personally. Is there anyway, I can pay a fee to get the recipes of the wonderful food you have prepared on a regular session. As there are a few recipes in your blog I am very keen to try out but do not have the recipes to do so. Cheers,Rita

Hi Rita,

Where are you from?

Aunty Yochana said...

Oh Hi,

I heard Phoon Huat is selling the Japanese Mochi flour at a very cheap price. Go for it...they are having classes on it too.

Aunty Yochana said...

HI Anita,

Mooncake syrup is not corn syrup or molasses. I have the recipe in my blog. It's very simple to make your own mooncake syrup but you can also store-buy from retail shops.

hi aunty

i too wouldn't mind paying for you "unpublished" recipes as I'm unable to attend classes as there's no one to babysit my toddler.

Aunty Yochana said...

Hi Yoo Lee,

It's not difficult but you must buy the Japanese Mochi flour.

Hi Aunty Yochana,
do u prepare yourself the coloring or flavouring of ur snowskin mooncakes ? or u bought the off-the-shelf one..
which brand is good ? and more fragrant ?

rgds,
jessica

Aunty Yochana said...

Hi Jessica,

It all depends...

If I use Roselle, it's natural colouring. Pandan can be natural too.

Colouring - Wilton is good.

i saw that u suggest to go Sunlik for lotus paste over KCT. May i know why? Because other than my home cooked lotus paste i plan to try some flavoured ones. Therefore thought of buying some paste. Thanks!

Arwen said...

Hi aunty,

I'd alsobe happy to pay for unpublished recipes! And thanks for the tip;I'll try and get down there tomorrow.

Aunty Yochana said...

Hi Jas,

Both shops have equally good lotus paste. I suggest Sun Lik because they have more things there like moulds, cutters, colouring, nuts, etc etc

Hi Yochana,

I tried the mochi flour bought from Phoon Huat but my mooncakes don't look tranparent, my look like snow skin & when put in the fridge, they turned hard.

anonymous

Aunty Yochana said...

Hi anonymous.

That is why you noticed I seldom recommend buying ingredients from them. My friend called me last night when she heard about the cheap mochi flour they are selling. She asked the chef how come the mochi mooncake is so hard?? Those that she tried was made by the chef who taught the mochi mooncakes. I bought my mochi mooncake flour from Anna Phua and it's soft and nice. Anna Phua's mochi flour is genuine...

Aunty Yochana said...

Rachaeline,

You must buy the original Japanese Mochi flour or sometimes they called it Japanese glutinous flour.

Hi Aunty Yochana,

Thanks for your prompt reply.Forget to introduce myself, I am Cookie Monster. Will try to make it this weekend. May I also check what is the proportion between skin and filling? If my mould is 58g, then what is the weight for skin and weight for filling?

Aunty Yochana said...

Hi cookie monster...If it's 58 gm,

for snow skin, use 28 gm skin and 30 gm. lotus paste.

For baked skin - use 20 gm skin and 38 gm. lotus paste.

Have fun.

Aunty Yochana, would you email me this recipe and a daifuku recipe if you have one? I bot the mochi and daifuku flour from Anna Phua, but she was not around...had to attend classes to learn how to make both. But was bz with work, din attend any class. Thanks!

Aunty Yochana said...

Hi dew,

I'm unable to post Anna Phua's recipe without her permission and it's unethical to do that especially when both of us are teaching. I guess you have to get the recipes from her or probably just buy the recipe from her. She can explain in detail to you how to make it and she might let you attend the next mochi class for free cos you bought her recipe.

Hello,

Have you already posted the recipe on how to make this mochi cake previously or are you just posting your mochi product? :o)

I love eating the mochi I've bought in a grocery store and I've been trying to make it. My mother loves how the outside is so soft and doughy.
