Coffee Walnut Cake






Ingredients:

3 eggs
135 gm. sugar
1/8 tsp. salt
50 gm. milk (fresh or evaporated)
120 gm. cornoil
185 gm. cake flour
1 tsp. baking powder
1/2 tsp. Bicarbonate of Soda
1 Tbsp. Nescafe Coffe Powder mixed with 1 Tbsp. Hot Water
1/2 tsp. Coffee paste
80 gm. Chopped Roasted Walnuts

Method:

(1) Break the eggs into a mixing bowl, stir with a hand whisk , add in sugar, salt, milk and cornoil and stir till smooth and shiny.
(2) Add in cake flour, baking powder, bicarbonate of soda and fold lightly to just combine. Do not overfold at this stage. Fold in chopped roasted walnuts.
(3) Pour into a loaf pan - 8" x 3".
(4) Bake in preheated oven at 170C for 30 mins. Stand for 10 mins. in tin before turning on wire rack to cool.

hi aunty, how do you get the walnuts to be all over? the last time i baked walnut cake, they all were at the bottom. I followed your Rich Walnut Cake recipe.

Hi Yuri,

I also don't know but for this coffee walnut cake, it's quite a watery batter and yet the walnuts stays put.

As for the rich walnut cake, please do not stir too much. You can add in more walnuts so that it has walnuts all over the place.

I omitted the wheat germ cos I don't like it. You can add 20 gm. wheat germ into the batter.

you've got a collection of really good recipes. i wanted to try out this coffee walnut cake recipe. I couldnt understand what cornoil is. Also how do we prepare the coffee paste that you've mentioned.

hi chehak.

cornoil is also used for cooking.

coffee paste is store bought and if you don't have it, just omit it and increase your nescafe to double.

yes you can sub with melted butter instead of cooking oil.
