Steamed Coffee & Coconut Small Cakes
Ingredients:
1/2 grated coconut
1/4 tsp. salt
2 tsp. cornflour
2 egss
85 gm. chopped gula melaka
30 gm. sugar
1 tsp. ovalette
100 ml. coconut milk
120 gm. Hong Kong flour
1/2 tsp. baking powder
1 tsp. cocoa powder
1 tsp. coffee paste
Method:
(1) Mix the grated coconut, salt and cornflour together and press into plastic tube mould.
(2) Whisk all the remaining ingredient together till thick.
(3) Spoon the batter on top of prepared moulds and steam at high heat for 10 mins. or until cooked.
(4) Remove and serve.

If you use desiccated coconut, just sprinkle lightly into the mould instead of pressing down hard into the mould.

I did not grease my mould but you brush a little if you're afraid that i't difficult to unmould. For silicone mould, no need to grease. It comes out easily.

Aunt Lucy, I will like to know for the 1/2 grated coconut means what? does is mean 1/2 kg of grated coconut? Sorry if I have ask a stupid question as this is my first time making cakes.

1/2 coconut means half of a whole coconut and not 1/2 Kg.

Coffee paste is just a paste with a coffee fragrance. To substitute, just stir some Nescafe granules with some hot water.
