Yoghurt Cream Cheese Cupcakes
Ingredients:
180 gm. butter
130 gm. castor sugar
100 gm. cream cheese
100 gm. plain yoghurt
3 eggs
180 gm. cake flour or all-purpose flour
1 tsp. baking Powder
1 tsp. grated Lemon rind
Method:
(1) Cream butter, cream cheese and sugar till creamy.
(2) Add in eggs one at a time till well mixed before the next addition.
(3) Add in yoghurt and lemon rind.
(4) Fold in flour and baking powder.
(5) Spoon into 12 muffin cups and bake at 175C for 25 mins. or till cooked.
(6) Cool on wire rack before serving.
