    I have seen all your cakes and appreciate them. But this one in particular really boggles my mind. Did you make the mousse with caramel like syruping the sugar and water on stove top until reaching the desired doneness and making it into a mousse? First time, I have heard caramel mousse. This is one of your great innovative ideas!
