Bak Kwa Muffins





Ingredients:

150 gm. eggs
150 gm. sugar
1/4 tsp. salt
1 1/2 tsp. baking powder
1 tsp. vanilla essence
150 gm. cake flour
50 gm. cornoil
125 gm. melted butter
80 gm. chopped Bak Kwa

Method:

(1) Whisk eggs and sugar till fluffy, Fold in the rest of the ingredients and stir lightly . Don't overmix.
(2) Scoop into muffin cups and bake at 190C for about 20 to 25 mins.
(3) Cool on wire rack.

I ever think of adding pork floss to muffin but never think that bak kwa can combine with muffin. :)

check with you.. usually how do u scope the muffin/cupcake batter into the paper cup.. whereby their sizes all looks the same after baking ? thanks

Hi Jessica,

You either use an ice-cream scoop or judge by the height of the batter in the muffin cup.

it's a sign of overstirring causing it to turn smooth then when you bake, it turned hard.

You must wait for the cupcakes to be completely cooled before you store away in a container.

Cupcakes are small little cakes while muffins are more dense and bready.

Is it normal for it to shrink after baking? Do we need to remove from the cup after baking?

Shrinking of the cupcakes could be due to bad quality papercups or muffin cups. Or...it could be the wrong muffin cups too. Don't use the waxy type for cupcakes.
