Ingredients:
150 gm. eggs
150 gm. sugar
1/4 tsp. salt
1 1/2 tsp. baking powder
1 tsp. vanilla essence
150 gm. cake flour
50 gm. cornoil
125 gm. melted butter
80 gm. chopped Bak Kwa
Method:
(1) Whisk eggs and sugar till fluffy, Fold in the rest of the ingredients and stir lightly . Don't overmix.
(2) Scoop into muffin cups and bake at 190C for about 20 to 25 mins.
(3) Cool on wire rack.

ReplyDeleteShrinking of the cupcakes could be due to bad quality papercups or muffin cups. Or...it could be the wrong muffin cups too. Don't use the waxy type for cupcakes.
