Water Chestnut Kuih





Ingredients for Water Chestut Layer:

30 gm. Tang Mien flour (Wheat starch)
30 gm. Tapioca flour
100 gm. Waterchestnut flour
110 gm. sugar
400 ml. Water
8 nos. chopped Fresh waterchestnuts

Gula melaka syrup: Boil till gula melaka dissolves

100 gm. gula melaka
60 gm. water
2 pandan leaves

Top White Layer:

2 tsp. tapioca flour
2 tsp. tang mien flour (Wheat starch)
50 gm. chestnut flour
1/2 tsp. salt
130 ml. thick coconut milk
100 ml. water

Method:

(1) Mix all the ingredients for the water chestnut layer in a mixing bowl.
(2) Add in gula melaka syrup and stir evenly.
(3) Pour into greased rose mould and steam for 15 mins.
(4) Mix the white layer ingredients together and stir will well mixed. Pour on top of water chestnut layer and continue to steam for another 15 mins.
(5) Cool before removing from mould.

    It's brown because you use brown sugar?
    I made with "bing dang" (Chinese sugar) before and it is clear.

    yes I used brown sugar. Chinese sugar can also be used.
