hi aunty.

this is a little out of the topic. I love unbaked cheesecake a lot. But I find it a little confusing with regards to the amount of gelatin used.

Does the amount of gelatin depends on the amount of cream cheese or whipping cream?

Because i've come across a number of recipes that use 500g of cream cheese but only use 1tbsp of gelatin.

And for your cream-o cheesecake recipe, although you use only 260g of cheese, yet you put in 1tbsp of gelatin too...

please help.

hi ajie,

you have to see the recipe.

the one you mentioned 500 gm. cream cheese - more cheese , uses only 1 tbsp. that recipe probably doesn't contain much liquid whereas mine uses whipped cream and less cheese.

Can I know what is "light cream"? Is it the same as non-dairy whipping cream or can you recommend which brand of cream is light cream? Please advice. Thanks.

Hi Evelyn,

Light cream is a milk product with a fat content which ranges from 18-30%. It is sometimes known as coffee or table cream. You can buy light cream from NTUC Bulla brand.

Thank you for your explanation and prompt reply. Can this Bulla brand light cream be use for making panna cotta or is whipping cream (dairy or non-dairy) a better choice?

for panna cotta, use dairy whip cream - President or Elle vire.
