Roti Boy Dough

With my roti boy sponge dough sitting in the fridge for 3 days, I finally had the time to add in the basic ingredients and made them into soft fluffy buns...

Dear Yochana,
Your Roti boy looks so nice, my bread never looks so shiny and beautiful brown on the top like yours, can you tell me what I have to do, I brush some eggs on the top, but never looks good as yours, thanks for your help.

Hi Aunty,

You mean, you rise the sponge dough in the fridge for 3 days. This is a great news to me. I like bread make from sponge dough, it softer. I think I should go and try it. Thanks.

Yes Liying,

after the demo in the class, I kept the sponge dough for 3 days in the fridge before doing it.

I need yr advice: do i need to chill the prepared and proven dough in the fridge if i'm keeping it overnite to bake the following morning? Tks

Yes you have to leave it in the fridge if you want to keep overnight or more days.
