Aunty,

I bought a packet of Mochi bread pre-mix and the instruction (in Korean)was translated to me by the shopkeeper. It says to mix 250g of premix with 60g egg and 70ml of milk or water. Stir and divide into 40g rounds and bake at 180C for 30-40 mins. But it didn't say anything about proving. Does it need proving?

Btw, I tried your steamed milk cake and instead of a dome on top, it opened up like huat kueh. Hahaha, but it's nice though.
