Durian Cupcakes

aunty, i come across many muffin recipes. They all emphasize in not OVERMIXING the batter after flour is added? Does that mean we neglect the traces or lumps or flour still present in the batter to prevent overmixing?

Hi kristin,

overmixing for muffins is the greatest disaster...leaving traces of flour in the batter is better than overmixing. Don't worry about the traces of flour. When you scoop into the muffin pan, the flour will bind with the liquid in the pan and after baking there will be no more traces of flour.

oh i see.. so it is okay to leave the batter with traces of flour rite? I ask because I'm afraid that the muffin comes out with patches of white flour and when you bite them, it's like eating uncooked flour.

For muffin do we have to add baking powder & bicarbonate of soda? I can never get the nice shape like yours. Pls advise thanks

most muffins requires baking powder but not every muffin requires bicarbonate of soda.

Your cupcakes & muffins all look so nice shape. I tried cupcakes & muffins, they looked very nicely risen but flatten when cooled. Don't know where go wrong?
