Durian Dodol Snow Skin Mooncakes

Snow skin are all the same taste except for the fillings. Most ppl love this Durian dodol mooncake. My favourite..'

Hi anonymous,

the previous durian snow skin fillings is using durian lotus paste while this is using durian with glutinous rice flour ...like making dodol but I used microwave..instant dodol.

Hi Yochana,

What is the amount of shortening to use 75g or 50g. If too much icing sugar will it cause the snowskin to be sweet & hard? What is the amount of skin to filling?

Hi anonymous,

it all depends on your recipe whether to use 50 or 75 gm. I can't comment on this because i don't have the proportion.

Snow skin I normally use 65 gm. It also depends on your mould.

Hi Yochana,

I tried your chocolate ping pi snowskin mooncakes but can I cut the shortening from 75g to 50g? I used 50g for the skin, so hard to wrap & can see the filling. Also maybe I mixed too long, look oily. Regards,

you should use what I've posted...don't change anything. If you cannot get what i did then it's because of your changes. My recipes are all tested.

You mix flour, icing sugar & crisco shortening by rubbing or stiring with a wooden spoon? Thank you

Hi Yochana,
I baked mooncakes yesterday. They looked OK but why does the skin separates from the filling upon cutting? Is it because the lotus paste had been in the fridge and when I tried to roll into a ball it breaks up easily?Does the lotus paste need to be in the fridge? and mine doesn't have that shiny gloss after rolling & wrapping in the yolk - not enough oil?? Please advise. Many thanks, Anita

hi aunty, why does your snowskin mooncakes always look so beautiful? when i dusted the mould with flour, the surface looks very floury and the colour isn't nice :-(

any snow skin recipe will still work. Study the recipe carefully and see which one you like and then work on it.
