Steamed Cheese Chocolate Cake





Ingredients:

4 eggs - separate egg yolks and egg white
120 gm. sugar
1/8 tsp. salt
250 gm. cream cheese
150 gm. whipping cream
100 gm. cake flour
30 gm. cornflour
1 tsp. vanilla essence
2 - 3 Tbsp. Chocolate emulco

Method:

(1) Beat cream cheese, salt and 1/2 of the sugar in a mixing bowl till creamy then add in eggs one by one , followed by whipping cream.
(2) Fold in flour and corn flour and mix evenly. Add in vanilla essence.
Whisk egg white with the balance half of the sugar until fluffy. Fold into the cream cheese mixture.
(3) Take out 1/4 of the mixture and add in chocolate emulco. Stir till evenly mixed. Put batter into a piping bag.
(4) Divide Plain mixture into 3 parts. Pour 1 part of the plain batter into a square tray 7" x 7" (lined with paper) and pipe some chocolate mixture on top. Steam for 10 mins. Repeat process till finished.
(5) Cool cake on a cooling rack.

Hi Mima,

I used Kitchen Aid - you can get it from Mayer Marketing. it's really good for home use, for making cakes and cookies.

Spar mixer has different capacity. I'm using one for my bread. Mine is a bigger version but do find out if it breaks down, whether there's any technician to repair it. Mine has this problem

Thanks for the advise. I went to Mayer to take a look at the kitchenaid mixer but the bowl capacity is too small. I am now considering kenwood KM020, it will be available here in Oct or Nov this year but its very costly. Do you know whether kenwood mixer is reliable?

Whip the egg white to medium to stiff peak.

Use Dairy whipping cream. More delicious.

Kenwood major has the ca[acity of 6.7 liter rite? Can it be used to beat ingredients in small quantity such as 2 egg whites only or 1 butter only? Thank ya aunty, really appreciate it.

Beating 2 eggs in a Kenwood , sometimes it works and sometimes it doesn't cos the whisk can't reach the base.

Very pretty cheesecake.

I just made a similar cheesecake but not sure the texture i've got is correct.. but i highly doubt so. It's dense abit like kueh texture. Do you still remember the texture of your cheesecake? I think it should be light and soft.
