I bought a mooncake plunger mould from Sun Lik today. May I know what is the weight of the lotus paste and the pastry skin used for your mould. Thanks.
there are 3 sizes for the plungers, what size is yours?
What you should do is to do a weighing test on the first mooncake. Take the dough, fill up the hole and then weigh the whole dough. From here you can roughly gauge how much you want for the skin and how much on the filling. I think I only used about 20 gm. for the skin and the rest are the fillings.
Try out this test and let me know whether it works for you.

Btw, i have cooked my frozen lotus seed today. Perhaps they are being freezed to death. All too dry to cook into paste... sign... will try another round.
Very easy, wash them then dry-fry in kuali for about 10 mins till dry then blend it. Tips: In order to know whether it's ready, add in some white sesame seeds while frying and you can judge whether it's cook by looking at the white sesame seeds. The black sesame seeds are too black to let you know that they are cooked.
These days I'm too lazy to prepare the above, so I bought ready made processed Black Sesame Seeds. You can buy from medical hall and the brand is "GREEN MAX".

Thanks for the suggestion. I will give it a try only after my son exam, two weeks later.:( My fingers are very itching now, hoping to try out my first bake mooncake. Hope I can succeed.
