Red Beans Spiral Mooncakes

Hi Aunty Yochana,
This red bean mooncake looks so good! The amount of red bean paste is just overflowing!! haha. Could i ask, for the red bean paste do we just blend the cooked red bean and fry it until dry with sugar? May I add maltose instead of sugar? Thanks Aunty!!

Hi Irene,

You can do what you have suggested but they will not be very fine cos the skin is still in the paste. I actually washed the cooked red bean in a sieve into the water then drain away the skin, then squeeze the red bean in a muslin cloth. This way, you'll get smooth and silky red bean paste.

Hi Evelyn,

Bake at 175C for about 25 to 30 mins.
