Hi Aunty Yochana, This red bean mooncake looks so good! The amount of red bean paste is just overflowing!! haha. Could i ask, for the red bean paste do we just blend the cooked red bean and fry it until dry with sugar? May I add maltose instead of sugar? Thanks Aunty!!
You can do what you have suggested but they will not be very fine cos the skin is still in the paste. I actually washed the cooked red bean in a sieve into the water then drain away the skin, then squeeze the red bean in a muslin cloth. This way, you'll get smooth and silky red bean paste.
