Aunty your swiss roll looks so good. I just made mine using the sponge cake mix I bought from Phoon Huat. As I was rolling it up, it started to crack. Yr advise will be greatly appreciated.

I'm repeating the class on the 16th of November and any recipes taught in class will never be posted as it will be very unfair who paid for it.

Hi Aunty, hope you can advise me on the following question:

1) can I substitute low protein flour with normal flour?
2) Can I substitute sponge mix with sef-raising flour? or can I make my own sponge mix flour?
3) how much batter should i fill the swiss roll baking tin with?

I found a recipe & made it yesterday. They cake turn out quite hard and from the look it seems like I have put in too much batter so it looks more like a swiss block rather than swiss roll.

Appreciate if you could advise me on this.

Hi Michelle,

I just taught this swiss roll yesterday...one of the students got to roll it and it was "perfect"..no cracks at all.

(1) low protein flour can use plain flour.
(2) sponge mix cannot use sr flour.
(3) how much batter to pour in is up to you to judge how thick you like it ..
