wow, it looks yummy and yet healthy.

Can I pick yr brain, I've been baking pullman bread for couple of times already, it turned out to be excellent, but last week, I baked again, it turned out to be a brown bread, including the inside, everything is the same, I didn't change anything. Hv u encounter such problem before?

I heard that home oven is not able to create the hard crust that this roll need... just curious to know if u manage to create the same coomercial effect in your home oven?

just spray some water into the oven before and during baking.

Your bread looks so nice. Did you use sourdough? Nice crumb, looks so spongy, chewy. Must have a nice time scoring, look so rustic. I bet the crust must be very crunchy coming out of the oven.

For home business, what bread machine/mixer do you recommend, and what commercial oven do you use? Is gas better or electric.

When I do come to Singapore, I would love to visit you. You are really my inspiration.

Hi Andrea,

I did not use sourdough but I used overnight dough.

I used a Spar Mixer for making bread. They are quite strong for bread making...this is more for home use.
