Cranberry Lotus Paste Roselle Snow Skin Mooncake

No colouring added to the snow skin....used fresh Roselle juice.

May I know what is Roselle juice? If my mould is 160g,what should be the weight of the skin and filling? Is there a method to calculate the proportion so that I know how to convert when I use a different mould. Thank you.

Hi Cookie monster,

Roselle is a kind of flower and when you cook it, it will be dark maroon in colour, something like Ribena.

If you mould is 160 gm. - Use 45 gm. skin and 115 for the fillings.

I planted the roselle in my garden. Now my poor roselle is limping weaking.

Thailand and Malaysia sells Roselle. They are sourish in taste. You can get the syrup in the supermarket but it's too sweet (cordial). I prefer the fresh ones.

Thanks....got the mould today. Did the bake today but turned out to be hard though I baked at 190 degrees for 10 min ....wondering if any difference if I use canola oil ?

Hi Rosalynn,

Here is a rough guide for you:

I used 45 gm. for skin and 135 Lotus paste with a single egg yolk.

It depends on your mould, so all you have to do is to cut down here and there to fit into your mould. I'll be having a mooncake class on the 9th of Sept. It's a bit late tho but it's all for a blog fan who flew in all the way from USA who is keen to learn.
