Baked Tapioca Kueh












Ingredients:

500 gm. grated Tapioca
100 gm. grated cocout - skin removed
150 gm. Gula melaka
60 gm. sugar
1/2 tsp. salt
1 beaten egg
30 gm. custard powder
200 ml.thick coconut milk
100 ml. water


Method:

Boil gula melaka, sugar, salt and water till sugar dissolves. Sieve mixture and then
Mix all the above ingredients together and pour into an 8" Square tin lined with parchment paper and bake at 185C for about 50 to 60 mins. or till cooked.

You are so funny leh.

I am so envy that you can bake everyday. I am a working mother, my kids is 5 and 3 yrs old, they need alot of attention from me. I really wish 1 day I can be like you can bake everyday and share my sucessful piece of art with my family, friends and neighbour.

I still bake, but only once a week, but not everytime is successful. Sometime I even have to throw away my cake/kueh. But I always feel if I dont try it out I will never learn how to make.

BTW do you teach? Will really like to learn from you.

sometimes you can find it in giant or ntuc.

I normally buy it from Johor Bahru.

aunty, may i know how is the texture of this kuih? is it sticky and soft? I have tried making one tapioca kuih which is yellow in colour. but i dont like the texture coz it is hard and crumbly (due to baking). hAHA.. dunno whether wanna try or not leh.. =)

Hi Yoyo,

mine is definitely not crumbly.

Omit the grated coconut if you don't like the crumbly feeling and add in a little more water. making tapioca kueh is very subjective as it depends greatly on the texture and grade of your tapioca.

oh i really can omit the grated coconut? hehe.. i dunno leh.. thanks aunty.. To make the kuih softer, do you think the same recipe can be used to steam? it will be softer right?

I tried your recipe, the taste was good however the tapioca was too coursely grate. Can I know what what kind of grate you use to make it so fine?

I would like to try it again soon :)

Hi Sunsweet,

We use Magimix blender to do it. We grate and blend it.

It's 8 x 8" sq with about a height of 1 1/2".

You mean you grate then blend it?
meaninf you grate the Tapioca, then blend it with the rest of the ingredients?

cos its not stated in your receipe.. thus I would like to try it again if possible :)

Hi sunsweet,

Actually I just grate only and it's already very fine. I taught you the blending method because I think your grater is not so fine. Omit the blending if your grater is the fine type.
