  3. Hello Aunty Yochana, it's me again.

    i just bought the nigella recipe book. and she has everything in ounces and cups, which is sooooo frustrating!

    i need some advice on what kind of cups should i buy to measure flour and sugar. and what kinda cup to measure milk and butter?

    i read that 1 cup of flour is 112gms approx. is that the same for sugar? :( i really wanna try some recipes here and there, but its such a headache and failing once always dampens my baking mood for a month before i try something new again. :(

    Yeah I understand. Nigella's books are like that. Though I bought quite a number of her books, I don't like the recipes inside.

    Normally I use this measure:

    1 cup of flour = 145 gm
    1 cup of sugar = 200 gm
    1 cup of butter = 250 gm
    1 stick of butter = 125 gm

    I baked fruit cake but raisin sink to bottom, but I'd put some flour mix with raisin. Please need your advise.
    To steam bake cheese cake, and my oven is convention oven with fan. May I turn on oven fan or turn off fan when I steam bake my cheese cake. Tks for your advise.

    First the fruits will normally sink if the amount of fruits are too little. The other problem is that the batter is too watery.

    This is not the wine yeast biscuit type. This is using instant yeast.

    Use convection oven with top and bottom heat for cheesecake. I never like to use fan mode for all my baking.
