Yesterday I have try the steamed soft banana cake the top layer is not so sponge as same as yours.Can you advise what is the problem.How long I have to whisk the eggs with electric or hand whisk? I have use electric am I right.

I just whisk eggs and sugar till creamy.

How's yours? Very dense and hard? You could probably overmix the batter.

hi aunty..i did the steamed soft banana cake too but the top split into two. i overmix ?? wish u conduct classes here..wow another mouth watering creations of yours. yummy and look too beautiful to eat and they certainly brighten up my day after the cake failure!! hahaha..diana

I use electric whisk for 15 mintues
ya is very dense and hard.So I have to hand whisk untill creamy ?am I right,If right were try again this coming weekend.

Hi Lilian,

You use an electric whisk to whisk your eggs and sugar but don't whisk the flour, just use a spatula to fold in the flour.

there is no secret to this fruit tart. Just make a tart shell, pipe in custard and then decorate with fruits.

As for the steamed soft banana cake, I really don't know leh,...heat too high? Mmmm...

aunty yochana, i tried making the fruit tart. however, i have problem with the tart shells. they are too hard after baking. Also i dont know how to adjust the thickness when i fill the dough into the tart mould. thats why my tart shell is too thick and a total failure... can you advice me about the above? Thank you so much!

HI,

one way is to roll it between 2 sheets of plastic bag to the thickness that you want. Place it into the tart mould and press into shape. \

another way is to take the dough straight away and press into the tart mould and use your finger to the tricks and judge the thickness accordingly.
