Steamed Soft Banana Cake















Ingredients (A):
200 gm. mashed banana
1/8 tsp. vanilla essence
1 tsp. Bicarbonate of soda
a pinch of salt

Ingredients (B):
3 small eggs
100 gm. brown sugar
100 gm. pao flour / Hong Kong flour / superfine flour
1 tsp. Baking powder
65 gm. cornoil

TOP LAYER:

2 eggs
60 gm. sugar
25 gm. water
65 gm. pao flour / Hong Kong flour / Superfine flour


Method:

(1) Mix all the ingredients (A) together and set aside.
(2) Whisk eggs and sugar together till flurry, add in flour and baking powder and mix till well combined. Add in mashed bananas mixture and cornoil and stir till well combined.
(3) Pour into a greased and lined loaf pan and steam for 15 to 20 mins till cooked.
(4) For topping: Whisk eggs and sugar till fluffy, add in water and flour and mix till well mixed. Pour on top of steamed banana cake and steam again for another 15 mins. or till cooked.
(5) Serve

Dear Alison,

You can cover with aluminium foil if you find that your steaming has water dripping onto your cake. Some steamer doesn't have this problem , so no need to cover. It's optional actually.

Hi anonymous,

My advice to you is to steam the banana cake layer first then the plain egg layer on top because the banana layer is heavier and it will press the plain layer down and it will it not look nice. You can turn it upside down like me when you serve...both ways are acceptable.

Cos i've never like those which sells outside as the texture is rough.

Will try this banana cake next week but will skip the top layer as prefer all to be banana. ;)

Hi Aunty Lucy,

Thks for the recipe. Your bake look so nice and yummy. I just tried baking this and it didn't turn out that well. The sponge layer turned out very dense and had a very strong "eggy" smell.Could it be that i didn't beat the egg long enough? The banana layer rose a lot more in the centre and refused to go down so my sponge layer was covering more of the sides than the centre. It looked kinda of funny. Any advice on how I can make my cake better? Would like to try again. Thks and regds. Chris

mmm....funny.

I made the banana portion and while it's steaming inside, I had to rush off to office so I asked my maid to do the topping for me. I instructed her according to my method and tada....it was beautifully done.

I think you try using 2 smaller loaf pans instead of 1 big loaf pan and try again. Use a spoon to push the banana batter more to the side instead of a big lump in the middle.

“About dog’s shoes”….. Dogs do wear shoes, they must be trained to wear shoes when they are young say round 6 months old.

I used two small loaf pans of about 6" each. You can also bake in a normal sq tray of about 7" sq.

if i skip the top layer, how long do i have to steam the banana layer, is it 15 to 20 minutes? will it cook by 15 minutes if i'm using 8" round cake mould?

In that case, steam for 25 to 30 mins. Test with a skewer.

yes you can use cornoil instead.

Yes you can use bamboo steamer. No need to cover with aluminium foil.

I'm from Malaysia. May i know what's Del monte banana in malay? Is it the long type "pisang embun? or the short and fat type? I noticed some banana doesn't give the tiny black strips like what banana cake used to have. Thanks

Del Monte bananas comes from Philippines and I think Malaysia has another name for it.

I made this cake today. The banana layer came out alright but the sponge layer was very "tough". Any reason for that?

did you use a 3 tiered steamer or a wok?

a wok normally does not do a good job for steamed cakes.

Hi Aunty Yochana,

I tried baking this cake twice but both times it didn't turn out looking nice. I used a square 7" tin but the banana layer rose high in the centre aft steaming. Hence the plain layer was not able to be evenly spread on top n it also didn't rise n turn out tough n chewy. Hwr, the banana layer taste nice thou.

Pls help! Wat could hv possibly went wrong!

I had the same problem as one of the comments & u advised her to spread the banana batter to the sides but the batter was too watery to spread lei...! U don't mean steam for awhile then spread before it's cook rite?

Also do I steam at high or medium heat?

Aiyoh Aunty! Very sad that I juz can't get it rite lei..
