Have you ever try using 'Tang Zhong'(water roux starter) in your bread before. I came across this at Florence Blog, it sound so intertesting. Her bread look so fluffy and soft like yours. It seem like this 'Tang Zhong' work the same as Bread Softener.
yes I've used this method before. I called it a "sponge and dough method". This method normally makes the bread soft and fluffy even without bread improver. It's fermentation process is very good and the texture is very fine.

I think the name derives from the surface of the cake.
Some parts looks like the surface of the moon and some parts looks like the earth.
