Just make a optima sponge cake, slice it then cream it with butter cream and decorate as desired.

I am Angeline. I've been visiting your blog almost every day since I picked up baking last Dec. I would like to say you're a very talented baker, coming up with baking creations everyday and also a generous one, as I read you give away your bakes to less-privileged people. If you conduct a baking class, I'll like to attend too! There are many basic things I dunno about baking (such as melting choc, double-boil gelatin etc). aunty, I have a suggestion, give some shredded cheese inside the buttercream to make it more cheezy! this kind of roll sometime ago was really famous! I've baked one or two, and my niece&nephew loved it so much!

Hi Yoo Lee,

I did put in the shredded cheese. I grated according to the recipe but wow..it was too much for me so I cut down and was dissappointed when i cut it....can't see the grated cheese. should have put more.

Tried making the coffee swiss roll last night but the baked sponge has blobs of lumpy flour inside, so embarrassing...what went wrong??? Previously, the batter deflated when I was adding the flour. Can you help me please? SK.

Hi SK,

Try this method :

Sieve the flour directing into the beaten egg white and fold it lightly with a spatula, scraping from the bottom to the top.

i successfully baked a very tasty sponge cake. follow ur advice previously, use hand/claw and sieve the flour directly!! hehe, although a little bit messy but worth.

P/S: i dun have the luck to join ur class, i'm in kl ( >____< )
