Banana Chocolate Cake



















Chocolate Sponge Cake:
(A)
35 gm. Cocoa powder
70 gm. hot water
1 Tbsp. Chocolate emulco or Paste
1 tsp. vanilla essence

(B)
125 gm. Cake flour
1 tsp. baking powder
1/2 tsp. Bicarbonate of Soda
75 gm. sugar
1/4 tsp. salt

(C)
45 gm. cornoil
80 gm. egg yolks
30 gm. fresh milk

(D)
150 gm. egg white
120 gm. sugar
1/4 tsp. cream of tartar

Ganache:

300 gm. dairy whipping cream
250 gm. melted chocolate
50 gm. butter

Decoration:

Some Bananas - slice lengthwise
250 gm. non-dairy whipping cream
35 gm. cocoa powder + 35 gm. hot water

Method for the sponge:

(1) Mix cocoa powder, vanilla essence, hot water and chocolate paste together.
(2) Mix all the ingredients (B) together in a mixing bowl then add in (C) and mix to form a smooth batter. Add in the cocoa powder mixture and mix well.
(3) Whisk ingredients (D) until stiff peak and gradually fold into the cocoa powder batter.
(4) Pour into a 9" round cake tin and bake at 177C for about 40 to 45 mins. or till cooked. Leave cake to cool completely and then slice into 3 layers.
(5) Mix all the ingredients for Ganache and then microwave it for 20 secs. , stir till evenly combined and smooth. Microwave again if the chocolate has not melted. Leave to set before onto cake.
(6) Mix the whipped fresh cream with the cocoa powder mixture, spread onto one layer of cake. Top up with sliced banana and continue process till finished.
Cream the whole cake with the balance fresh cream.
(7) Pour Ganache on top and leave the whole cake in the chiller to set before slicing.
(8) Slice and enjoy!!!!

Gosh aunty, how good does this cake look? How much do i want to eat it right now? How i wish i was secretly your neighbour and one day i'd smell a pie baking and i'd follow it to your house. It'd be like desperate housewives but without the sex and dead bodies ;)

Oh i have a favour, can you recommend me a buttercream recipe that can stand outside for abt 6 hours and is not too sweet? I'm baking cupcakes for a fund raiser. thanks!

I have the butter cream recipe in my blog. It should be able to withstand your 6 hours and if the room is cooler, it can even withstand 24 hour or more.

I need your guidance on the following..

1. Are you using 9" round cake tin for the whole cake?

2. When you baked the sponge cake, do you imm invert and let it cool on the rack?

3. Will the sponge cake shrink slightly?

4. For step 5, as mentioned "leave to set", when the mixture has cooled, will it curdle or harden?

Hi kate,

yes I'm using 9" round tray.

After baking the sponge cake, wait for a few mins then loosen the edge and invert onto a cooling rack, lift up the tin and leave it to cool completely. Sometimes the cake will shrink a little.

For Ganache, leave it to set so that you can spread onto the cake. If it's too watery, leave it in the fridge. If it's too hard, microwave again for about 10 - 15 secs.

Need your advise on this cake again..

I baked this cake over the CNY, everything was near to perfect but was saddened when the ganache melted so fast.. I don't know which step it had gone wrong :(

Also as indicated:

[Decoration:
Some Bananas - slice lengthwise
250 gm. non-dairy whipping cream
35 gm. cocoa powder + 35 gm. hot water]

The cocoa mixture is lumpy despite sieving the cocoa powder before mixing it with hot water.. In fact, for my case, it can't be mixed evenly :(

For step 6, after whipped the fresh cream, then fold in the cocoa mixture, am I right?

So sorry to blast you with lots of silly questions as I want to try making this cake again.

First of all, I want to thank you for your generosity in posting your reciples. I read that you are also working full time so I am AMAZED at your ability to make such wonderful cakes still.
I have a couple of questions on this cake, what is chocolate emulco? Is it important to use cornoil -- can I use other types of cooking oil, say sunflower oil? For the Ganache, what type of chocolate did you use -- dark or semi-sweet? Any possibility of replacing with cocoa powder to make the Ganache (I try not to stock too many items when I don't bake so frequently).
Looking forward to trying to make this cake for my bro and sis-in-law. They love banana choc cakes!

I would like to bake this cake for my Son's 2nd birthday but would need a 12 inch round pan instead of a 9inch round pan due to the number of guest. Should I double the recipe for a 12 inch pan?

Can I seek you advise again as I would love to know if this cake can be left outside without refridgeration after applying the ganache layer? This is because I realised that my fridge may not be big enough hold the 12inch cake :S

Also, if I managed to put it in the fridge after the ganache layer, will it be able to hold well in an air-con function room to last until cake cutting?
