Hmmmm... i'm trying to figure out what you put inside your mooncake. Pandan paste? Is that what makes the filling green? And it looks to me like you've also added some rice of some sort... glutinous?
I've been a frequent (but silent) visitor to your blog for a quite a while now, and I must say that the cakes/pastries that you make daily are so heavenly.
A recent comment by one of your fans made me come to the conclusion that you are based in Perth or has ties in Perth. If so, I would like to ask you if by any chance, would you know where I can get fresh pandan leaves and grated coconuts in Perth?
I don't reside in Perth but my daughter is doing her degree in UWA and so sometimes I do visit her. My daugher managed to buy pandan leaves there but not so much juice tho...You can buy pandan paste over here and bring back to Perth. As for grated coconut, I wonder if have packed grated coconut there? You can visit some vietnamese or chinese grocery shops there.
Aunty, I saw your recipe for the traditional mooncake and you use Hongkong flour, i wonder what is that? Do you happen to know if they have it here in CA USA?Is HK flour the same with cake flour or All purpose flour? Thank You & GBU

It's grated coconut fried with pandan juice. No that is not rice, that's melon seeds but because it's sliced, it looks like rice.

You can use any low gluten flour so that your pastry skin will be soft.
