Pandan Lotus Paste Mooncake

I see you really are an expert in mooncake making. It's not easy to make baked-skin mooncakes with such a thin crust. If it were me, all my fillings sure come out! :'(
That's why I can only do the agar-agar versions even though I love to munch on the traditional baked-skin ones, coz the fillings won't fall out from the hardened agar-agar "crust" mah! Heh! ;)
Hi aunty, haven't logged on for a few days and now WAH! So many lovely mooncakes... I love pandan paste flavour and your skill in making mooncakes is really great coz I can see the skin is so thin. =)
Just bake a thin sponge cake, slice into long strips and stick them together. Slice into squares and place into the tin. Pour in the mousse then cover the top with a piece of sponge cake.
