Can i ask, the other day, i wanted to make ganache to pipe into swirls onto cupcakes..

i used 2 parts milk choc and 1 part cream. the design only lasted for 2 secs and then fell into nothingness. can u help me?????

Hi Aunty,
These cupcakes looks so good and i'm sure also the taste..the icing looks so perfect but in the cupcakes i think u used melted chocolate cause no chocolate chunks can be seen,also aunty if you could share the recipe,i'll be thankful and the icing can be used over chocolate cake.

Hi Eve,

Waterbath is normally used for baking cheesecakes, creme brulee, caramel pudding, etc.

Place a pan of water in the oven and then place your cheecake (with pan wrapped with aluminium foil) or creme brulee into the water and bake.

Hi ling,

white chocolate is very sensitive. Do not melt too long otherwise the white chocolate will harden or turn oily. I think you might have over done your frosting causing it to be oily and that is why it fell off from the cake. Heat up your cream and then just pour into the white chocolate and stir.

once you are used to baking, it's not so bad as that...a troop...hahahaha.

I did all these myself (alone) and my maid to help in some washing and some washing is done by me.

Hi aunty, no it was not overheated. I used milk chocolate. What I meant was...it never held its shape, but instead became a pool of ganache again....:(
