Hi amy,

Yes, it's the same way as I did for all the checker cakes. Use cake rings to cut out the 4 pcs of cake rings on each layer of cakes. You need 2 layers of cakes and some strawberry cheese filling.

Hi aunty,

I need your help.

Last night i made blueberry cream cake using vanilla chiffon cake recipe as a base.

I used a loose base tin and lined the bottom and sides to bake the cake. After taking the cake out from the oven, I took off the outer ring and let the cake to cool down. Minutes later I noticed has got 'waist' .

And the cake collapsed half way. I did not invert the cake to cool. Do I need to?

Can you tell me how to cool the cake and how to avoid this problem.

Hi YS,

If you want to cream a cake, I suggest you use a traditional sponge cake recipe or the optima flour sponge cake recipe. You need a stable sponge cake for your creaming and the chiffon cake is too soft to to be used for creaming. Besides that, you need to invert the chiffon cake to cool it otherwise the waist line will seep in.

I find traditional sponge cakes too dry lah..Anyway, will try the optima flour next time.

But I still like chiffon cake as base lah. Will try to invert the cake pan while cooling. Crossing my fingers. Hehehe.

Must line/ grease the pan anot leh?

Hi Ys,

Basically, most ppl use traditional sponge cake as cake base and we normally has to brush with sugar syrup mixed with liquer. So there is no dryness here. O.K. better try the optima if you want to.

As for chiffon, I don't know what type of chiffon recipe you are using. Are you using the chiffon recipe which we used for making chiffon cakes with a tube pan? If you want to turn upside down, you can't grease the tray or else it will drop out of the tin when you invert it. If you don't want to invert the tin, then you have to line and grease the tray.
