I have a question which i hope you could help me....after seing some of yr recepies, i am still not sure if cake flour and plain flour are the same.

Hi aunty yochana,

I tried your sponge cake recipes, I bought a new cake tin for sponge cake, I found that they had volume when it baked in the oven, but it shrank really drastically after i took it out of the oven. And also, the outer crust I could not remove. Also again, the cake was not soft and spongy, but rather coarse texture. I dont know what I did wrong, I followe deverything exactly. THe oven was set to fan forced at 180C instead of 200C.

Any suggestions as to where i went wrong?

Hi Angie,

Which sponge cake recipe did you make? For optima flour sponge cake, it's not possible to fail and the traditional one needs skill.

Hi devan,

cake flour is low gluten flour while plain flour is medium. For cakes, use cake flour and for pastry and cookies, use plain flour.
