Buttermilk Doughnuts

No yeast added into the very soft dough....


2 cups Bread flour
1 3/4 cups Plain flour
1 cup sugar
2 large eggs
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon nutmeg
1 cup Buttermilk
3 Tbsp. melted Butter
1 tsp. vanilla extract

For coating: Some fine sugar mixed with a little cinnamon powder


(1) Beat the sugar and eggs until smooth.
(2) Beat in the baking soda, buttermilk, melted butter and vanilla extract.
(3) Add in flours, baking powder, baking soda and nutmeg. Stir till well combined.
Mixture will be lumpy and sticky at this stage. Refrigerate overnight.
(4) Next day, remove the dough from the refrigerator. Place the dough onto a well floured surface, the dough will be sticky, dust with flour. Roll into a large circle about 1/4 inch thick. Cut the doughnuts with a doughnut cutter.
(5) Deep-dry doughnuts till golden in colour and then drain it on an abosorbent kitchen towel.
(6) When cooled, put sugar and cinnamon mixture into a paper bag, add a couple of doughnuts into the plastic and shake till evenly coated. Continue till all the doughnuts are coated.

thanks for sharing ! you are so generous.
fews things to ask:
shall I use the "whisk" to do step number 1 & 2 ? or use "K-beater" ? for step#3, must use dough hook right? in what speed? I'm using kenwood chef, shall I use speed#4 in step#3?
ask so many amateur question hor :)
Can't wait to try this recipes!

I didn't use a machine for this.

I just use a hand whisk and a spatula to do the job. Very easy.

The dough extremely sticky. Have coated with flour but still cannot handle the dough. Use the doughnut cutter, all stick and cannot disloge. Can you teach me how to tackle this problem? Thanks very much, Wendy

Yes Wendy,

the dough is extremely sticky, add in some flour to knead slightly. Dust the table top with flour and use your palms to flatten the dough to about 1/2 inch thick then dip the cutter into flour and cut out the dough. Lift it with a spatula and place into the hot oil and deep-fry. Needs light handling over here.

Hi qinqin

Buttermilk is the liquid that was left over after churning butter. It has no acidic flavour and it's excellent flavour and consistency is good for baked food.

Can I use buttermilk donuts receipe and put choc rice, coated choco to it? Will the taste be weird??
