The brioche is a French specialty bread and it has a wonderful rich buttery egg taste.

Thanks for zooming into my blog first.

I used a brioche silicon mould to make these brioche. I also have the metal brioche mould. They are made in France and are very good. For silicon, they sides will be whiter whereas the metal, it will brown at all sides.

In most bread books there will be a brioche. Go to the bookstore - Kinokuniya and you will see a lot of brioche in most bread books.

Have been surfing website recently for similar recipe for brioche and found that the flour used is not bread flour (high protein flour), they use plain flour.. can check is this correct?

Hi fei fei,

my recipe also calls for plain flour but you can change it to half bread flour and half plain flour.
