Potato Chips & Cheese Cookies





Ingredients:

250 gm. Butter
200 gm. cheddar cheese - grated
1/2 tsp. Salt
50 gm. fine sugar
2 small eggs (lightly beaten)
1 tsp. Emplex (optional - purpose is to make cookies crispy)
300 gm. Self Raising flour
2 Tbsp. Milk powder
120 gm. cornflakes - crushed
1 Can Potato chips (Crushed)

Method:

(1) Cream butter with cheese, salt and sugar and emplex till creamy.
(2) Add in beaten eggs and fold in flour, cornflakes, potato chips and milk powder. Mix well till it becomes a soft dough.
(3) Use a small ice cream scoop to scoop the dough onto the tray.
(4) Bake at 160C for about 25 mins. or till golden brown and crispy.
(5) Remove from oven and leave to cook on wire rack before storing into cookie containers.

Yes, I used Mister Potato - potato chips, cheddar cheese and cornflakes. Very addictive....

the mister potato that you used, any particular flavour? According to your recipe it is crushed. How fine should we crush the potato chips?

Hi anonymous,

I used the plain traditional potato chips (guess if you something creative...go for some pizza flavour or garlic flavour). Use your hands to crush them but I'm scared to hurt my hands so I used my blender to blend coarsely - use PULSE and judge yourself.

I just bake the cookies today. Is it suppose to be soft on the inside and crispy on the outside. It taste great and very addictive.
I took some pics but could not upload. My laptop si liao. PC version outdated. Gotta hunt for a new computer. Thanks for sharing yr recipe.

these cookies are not the hard crunchy type. Normally with cheddar cheese it's a different kind of crisp though it's not soft also. I don't know how to express but seems yours is not crispy enough. Try to bake at a lower heat say about 150C and they will become crispy.

Hi Yochana,

Thanks for yr guidance. I think for the 1st batch of cookies, too kan cheong to eat. Never wait till golden brown, took out after 25mins and pop one into the mouth. Subsequence batches bake longer and it turns out golden brown and crispy.

For emplex, can I use it on any types of cookies? Beside cookies, what other bakes can I use it on.
Something u only need a pinch or a teaspoon but gotta buy the whole bottle. Don know what to do with it after that.

emplex can be used for all types of cookies and it's specially good for savoury cookies that uses cheddar cheese.

You can also use for your pineapple tart dough.

Hi anita,

If I'm not mistaken, it's the normal size - standard size. Try to cut down on the potatos chips. It's a bit too salty.

Hi Aunty,

I baked these today but I think I did something wrongly. My cookies ended up crispy outside but the small little bits of cornflake inside is still chewy. I baked them at 155 deg C for 25 mins. They are already golden brown. Could it be the way I added the cornflakes & potato chips? Cos lazy me mix the flakes, chips & flour together before adding to the creamed butter & cheese.
Hope you can help me to troubleshoot.

yeah it still works. Cut down the salt if your potato chips are the salty type.

I baked the cookies according to the temp and time u stated but find that the cookies were not crispy. There were some chewy bits inside which I don't know are potato chips or cornflakes?! Subsequently i baked them for a longer time and they did turn cripy but then they are a bit burnt :-( Is it because i did not use emplex?

Hi,

probably you oven is hotter...use around 140 to bake till crispy. it won't burn your cookies.
