Pandan Green Bean Kueh with shredded coconut

This kueh taste like kueh kosui except that it's pandan flavour.




Ingredients:
(A)
150 gm. rice flour
50 gm. Hoen kwee flour
40 gm. Tapioca flour
400 ml. water
1 tsp. alkaline water

(B)- boiled
250 gm. sugar
600 ml. water
1/4 tsp. salt
3 Tbsp. Pandan juice
a little green colouring

1/2 young white coconut )
1/2 tsp. salt ) steam for 8 mins.

Method:

(1) Combine ingredients (A) together and mix well. Mix in ingredients (B) into the flour mixture and strain.
(2) Use low heat to cook the batter until slightly thick. Pour into a 8" square tray and steam with high heat for about 40 - 45 mins. or until cooked. Leave to cool before slicing.
(3) Cut and coat with steamed coconut before serving.

I used the normal Hoen Kwee flour , rice flour and tapioca flour.

Lucy, i made this during the school holiday. My dh & kids loved it. I love this kueh, too. May I know whether Kueh Lompang uses the same flour as this recipe? Do you have any Kueh Lompang recipe? Thank you in advance & regards.

Hi sophia,

Yes, I will make the kueh lompang one day. For kueh lompany, you need to steam in some cups and must have a depression in the centre too. This pandan kueh as the kueh lompang taste, probably can use this recipe.

may i ask where to buy alkeline water? the rice flour need to buy specially for'wet' type or just rice flour will do? thks =)

You can get alkaline water from Sun Lik. She sells the rice flour too. I used the dry ones in pkt form.
