Longan and Red Date Konnyaku Jelly

Longan Red Dates Konnyaku Jelly


Ingredients:

15 gm. Konnyaku Jelly Powder
120 gm. sugar
50 gm. dried longan
50 gm. pitted red dates
1000 ml. water
3 pandan leaves

Method:

(1) BOil longan, red dates and water till thick and fragrant. Add in pandan leaves and let it boil for another 5 mins. Strain to get 900 ml. of longan and red dates water.
(2) Mix konnyaku jelly powder and sugar with whisk until well mixed.
(3) Add into the longan and red dates water and stir over low heat for about 5 mins. till konnyaku jelly and sugar dissolves. Turn off heat.
(4) Place a longan and red date into each small mould then pour in the konnyaku jelly and let it set in the refrigerator.
(5) Serve chilled.

Aunty Yochana,

I love this moulds and the look of this jelly. Is there a mail order for this jelly powder and moulds? As I am situated overseas I am not able to shop in singapore. Maybe you can direct me to a websites? Also where do i go again to look at your ik gathering. I need to locate you on the pic. I have forgotten which site I went to.

I don't know whether there's a mail order for this. You can get a friend to do it for you. You can use any mould of your choice. I think konnyaku powder is easily available overseas. I can always send some to you in the envelope.

how do I keep the lychee from floating to the top of the mould when making konnyaku jelly?

Hi,

Just sprinkle some longan into the mould first then pour in some jelly and let it set slightly before pouring in the balance.

i tried this Konnyaku jelly last nite but how come mine is different from what i saw from ur picture your is more red mine is transparent? i follow ur step to do it.

Thanks for your reply. I will definitely try out again. before that,Sorry for disturbing u so much,i have some question here so u mean,when i boil longan and red dates together i must cook with more 1000ml of water.Then when i cook enough thick,the water will turn red. Then only i strain to get 900ml water is it like this?

Hi Regine,

Yes the longer you cook, the darker the colour.
