Hi Aunty Lucy
How did you do the batter for the nian gao? I usually just coat the nian gao with a batter made from plain flour and water and the niao gao turns very oily and soggy after a while. Your nian gao looks really good. I hope to learn from you. Thanks
To fry nian gao, I just agak agak only. 100 gm. plain flour with 50gm. rice flour. some salt and beaten egg (not more than one egg). I added the egg in slowly just nice to coat the nian gao. Must not be too thick or too thin. If it's still too thick, add in some water.
Rice flour is blended rice. You can buy from any provision shop, market or supermarket. It's easily available. Buy those that comes from Thailand..better quality.

Hi Aunty,
What is rice flour? Other than using for frying nian gao, what else can I make? Any substitutes for this?
Thanks,
angeline
