Sorry to trouble you, but how do you keep that aluminium board the cake is on so clean, even after the decoration?

I clean it with a paper kitchen towel after decorating it.

How did you make the century egg agar agar?
It looks fantastic! Very professionally done.

hi tc,

I pour the agar agar into the empty egg shell. Pour into round ice cube tray and let it set.

Egg yolk with santan put egg yolk colour.
The black part, plain agar agar with chocolate paste.
Let it set and break the shell. wa lah..

One question though, on ur Victora cake, what did you use for dusting on top? Is it confectioner's sugar?

I used snow powder (DCA sugar) to sieve on top.

I'm using a Sony and I like it. It's so easy to use. My daughter just bought a new one T30 - with steady shots and the battery can last longer. A lot of ppl used Nikkon or Cannon too. I think every brand has their high end quality. Perhaps you can go to Cathay photo shop at Peninsula plaza (near the old capitol theater). They have a wide range there.

Snow powder (DCA) isnt the same as confectioner's right?

I mean, if u dust it on wet/warm dessert, it won't melt unlike if using confectioner's sugar

Are u familiar with Bianca Powder? That is the one we use to dust (if we don't want sugar to melt into the cake). Is it the same with snow powder?

DCA sugar won't melt but of course it gets a bit wet because of the cake after some time.

What is Bianca powder? mmm...very interesting. Where did yu buy them from? Learnt something today. Thanks..

Hi yochana. i live in the philippines and our chef uses this bianca powder. That's the only powdered sugar i know that won't absorb moisture.

Maybe diff countries uses diff terms for this kind of sugar
