I didn't use tart mould for pineapple tarts, I used my hands to mould it.

Is the pastry different from the "open tart"? Read somewhere that pastry used for "closed tarts (like yours)" has a higher butter content & takes a bit longer in the oven. Is this true?

Hi Ling,

Yes the butter content for the closed tarts are only slightly higher than the open tarts. The pastry has to be soft so that you can mould them into different shapes and pattern.
