Almond Cookies



Ingredients:

150 gm. ground almonds
230 gm. plain flour
150 gm. caster sugar
1/4 tsp. vanillin powder (optional)
1/4 tsp. salt
1 tsp. baking powder
1 tsp. bicarbonate of soda

150 ml. cornoil or sunflower oil
1 egg yolk for glazing

Method:

(1) Combine all the ingredients together in a mixing bowl and mix into a dough.
(2) Roll small dough of about 7 gm. each and arrange on baking tray.
(3) Brush with egg yolks and bake at 175C for about 15 to 20 mins. or till lightly browned.
(4) Cool well before storing into cookie containers.

Is the dough manageable enough to be rolled and cut by cookies cutter?

HI anc,

I can't remember the texture but I'm pretty sure you can use a cookie cutter to cut it out. Remember to roll the dough between 2 sheets of plastic to avoid sticking onto the rolling pin. Sprinkle some flour though...

Hi anonymous,

I used English almonds but down in Singapore and Malaysia, they do sell ground almonds. So being a lazy bump, I used ground almond which I bought ready-made.

hi aunty, i tried this recipe but my cookies turned out not very crumbly. it was qte hard in the centre. also, my dough was very difficult to handle as it was very crumbly and diff to roll into ball. is there a prob? and do i need to sift the flour to get a finer texture?

Would like to try your recipe but can i check on the optional vanillin powder. Is this is the same as almond powder? Cos i have a bottle of vanillin powder which i just bought and out of curiosity, i tasted it and it was bitter. Is that supposed to be the case and how does vanillin powder enhance the cookies? Yes you are right vanillin powder is bitter. It enhance the fragrance of the cookies...

yes you roast it first so that it's easier to blend.. Don't over-roast it tho.

yes you can sub - no need to make any changes. No vanilla essence , it's o.k. It won't harm the taste .

nways im jus curious but issit possible to substitute the ground almond with ground peanuts to make it into peanut cookies? tks :)

I baked the cookies just now and they are quite good! (:

Just some queries to make:

1) While the cookies were fine, I can see the sugar particles unfortunately, so I think my sugar could be not fine enough... If I use icing sugar, would the cookies be not crunchy anymore?

2) Coz I replaced cornoil by olive oil, I can still faintly smell the olive oil scent (which some people may not like), if I replace by melted butter, would it be more fragrant? If so, how many grams of butter do I need to melt?

yes your sugar is not fine enough. Buy very fine sugar.

Melted butter - use back the same amount.

I followed yr recipe but my cookies turn out to be slightly crumbly. How to make the cookies less crumbly? Can I refrigerate the dough bfe rolling it? If yes, how long do I have to refrigerate?
Also, do I have to grease the baking tray prior placing the rolled cookie dough on it?

Yes you can place the dough in the fridge but there is no necessity.

It depends on how your baked your cookies and how u store. Normally baked cookies can last for a minimum of 3 months if they are properly stored.

Thanks for your reply. Because I'm a beginner in baking, can I check with you another thing?

For baking cookies & cakes, I should turn on the heat for both top & bottom right? I saw on my oven there is another icon is fan & coil together, what does that mean?

So sorry, cause I really have no idea. I always turn on the top & bottom heat, but usually bottom will be cooked or burned faster then the top. So wondering if it's correct.

Hi Jo,

Always use top and bottom heat to bake.

I prefer to bake a tray at a time.

If your bottom is hotter, shift up your tray one shelf higher.

Coil icon could mean grill.

Some chefs likes fan mode but not for me. I use top and bottom heat.

I think I have the same problem as potato. I tried your recipe and my cookie dough turned out quite crumbly despite me adding additional sunflower oil. Even after being baked, the texture was still rather crumbly and I had to be very careful handling them. However, tastewise, they were fantastic!

Am just a little disappointed that I didn't get the texture right. Could be it because I used brown sugar instead of castor sugar? I cant figure out what went wrong as I followed your recipe quite closely. I hope you can provide me with some advice.

Hi anonymous,

Try mixing all the ingredients together with your hands. The sugar will melt and bind the dough together. You try with castor sugar instead of brown sugar.

Oh my! I used butter instead of corn oil and the rest of the ingredients were the same, my cookies turned out brown and hard. I guess I should stick to the corn oil?

Dear Aunty, may I know if your cookie is supposed to be crunchy and could taste the sugar crystals, or is it supposed to be soft and melts in mouth kind?
