Can i check what kind of knife you use for the cutting of cakes ?? I tried making the Jellyhearts but they looked so horrible after i cut them :( with all the crumbly base..
Actually a normal knife is able to cut the heart jelly nicely. When you said that your base is crumbly, it shows that the melted butter is insufficient. When cutting the base, don't saw but use your palm to press down the knife and you'll a "kok" sound and that means your knife has gone through it. sawing the base will create an ugly look and of course crumbs will be created too.

the top layer is ganache but I think it's abit too much. I poured thickly cos I was too lazy to keep the balance in the fridge.
