Chocolate chip muffins
Ingredients:
280 gm. Self raising flour
1 no. large egg
120 sugar
1/2 tsp. salt
180 gm. butter
100 gm. milk or buttermilk
1 tsp. Vanilla Essence
120 gm. chopped dark chocolate
Method:
(1) Sift self-raising flour into a mixing bowl.
(2) Add in butter and rub with fingertips till it resembles breadcrumbs.
(3) Add in sugar , salt and mix well.
(3) Mix wet ingredients together: egg, milk, vanilla essence and add into dry ingredients. Stir lightly. Do not overmix.
(4) Add in chopped dark chocolate and stir lightly and scoop batter into paper cups - 3/4 full and bake at 200C for about 20 mins. till golden or till skewer inserted comes out clean.
(5) Remove from oven and cooled....before serving.

this recipe really deserves a credit!
it is a simple to do recipe and the muffins are so delicious!! the muffin is moist and not too dense!
can mix w nutella, jam, raisin and of course chocolate chips!
and the results are consistent everytime!

3 days in a row I have used your recipe and all turned out to be great. Hubby says muffin comparable to a famous muffin stall..thanks once again, 3rd time over.

Hi, my friend intro me to ur blog.. and i tried the receipe today.. this is the FIRST time i tried baking ... but i have some questions.. hope u can help me.. ur sugar is 120gm ya?
and when i mixed the sugar and salt in... the sugar dun seems to melt.. and after i baked.. i still taste the sugar bits... i used fine sugar.. issit ok?
as for the milk i replaced it with evaporated milk... it is ok rite?

seems like your fine sugar is not fine enough. It should have melted after baking.
Evaporated milk is fine. No problem, in fact it's more tasty.

I had tried your Choc-chip muffin before without using buttermilk, instead I used evaporated milk,the texture is a bit dry.I would like to bake gain, should I add more milk or what should I add to improve the texture if I do not have buttermilk? Tks.

hi this is sharine again... i tried baking... but i have a few more problems...
1. the texture is dry...
i am using micro-oven.. hmm i wonder if it affects... i use only 150 for 25 mins and the color looks ok... i use 180 20 mins and it almost got burnt...
2. according to ur receipe it says add butter and rub with fingertips till it resembles breadcrumbs..but i cannot make it till like breadcrumbs... it become more like a paste?
hmm... can u teach me how to do it.. and
3. my friends said it is too salty .. is it because i need to use unsalted butter then i add salt like wat u wrote?
i add salt as per instructed but i use normal butter.. is that the reason?

I like to bake some of these for my godson's 1st month this Sun, 29 Jun. I wonder if I can swop a portion of the flour for cocoa powder and replace the chopped choc for choc chips instead? How do I proportion them? Help thanks!

Use 250 SR flour + 30 gm. cocoa powder.
for chocolate chips, use the same weight required. No changes.

yes you need to preheat your oven at least 10 mins before baking and you do not have to place your empty muffin pan in the oven during preheating.

When I mix the butter, it is a bit dry and lumpy. The butter resembled to the butter for chocolate chip cookie. Could it be I have put too few wet ingredient?

The muffins are gone as soon as I say that it is ready to be eaten. So lovely and delicious.
However mine was a little crusty on the outside of the muffin. Could it be that the oven temperature is too hot?

it might be the oven temp sometimes, it could be others things like using coarse sugar or small egg or too large eggs. so keep baking and you'll improve.

Hi, I used a rubbing in method but it doesnt look like breadcrumbs it look more like a paste. Please advise what's wrong ? My butter is still hard.

Got to know your blog thro Scrapabee. Did the muffins this morning using my new oven. My hubby finds them delicious but I find that though the muffins are soft, it sticks to my teeth. Could it be because I used the hand-held electric mixer to mix/beat the batter? Overdid it?

1. How big must the breadcrumbs be like after rubbing in?
2. When mixing the wet ingredients to the dry ones, how far should I stir? Should I stir till it becomes a paste without lumps?
