Strawberry Yoghurt Ice-Cream



Ingredients:

300 gm. fresh strawberries - blended
100 gm. sugar (sweetness depends on how sweet the strawberries are,cut down sugar if the strawberries are very sweet)
200 gm. Non dairy whipping cream
1 tsp. strawberry emulco
100 gm. strawberry flavoured yoghurt

Method:

(1) Blend strawberries and sugar together until it becomes puree.
(2) Whisk non diary whip cream until thick.
(3) Mix yoghurt with strawberry puree and then fold in whipped cream.
(4) Add in strawberry emulco and mix thoroughly.
(5) Pour into a container and freeze overnight until it's firm.

    If you replace the whipping cream with milk, your ice cream will not be fluffy and creamy but it will be more icy.

    Strawberry emulco is easily available....NTUC, Phoon Huat, Sun Lik , Giant Hypermart...

    Sometimes it's written as strawberry paste.

    just use a fork to mash the strawberries. You don't need a blender at all. Yes you can mix in the mixer too.

    Your ice cream dessert looks appealing!
    My attempt for this recipe didnt turn out well..not as smooth texture as yours. So disappointed..sighz ;(
    I couldnt find the non dairy whipping cream in neighbourhood supermarkt. So I bought the brand called "Emborc UHT whipping cream" instead. It forms curdles when whisked. Could it be the wrong type of cream used?
    Where could I buy the non dairy type whipping cream & what brand is recommended?

    you can use Rich whipping cream. the cream you used contains 35 to 36% fat so whisking the creams takes some care. You must not over whisk it, separating them.

    I tried this yesterday morning. The outcome wasn't really the same as yours. :( The ice cream was icey (like when you bite it it feels like eating crushed ices).

    You wrote about whipping the cream till thick. I don't really know what you mean by "thick", is it like stiff or soft peak? I have whipped to slightly stiff peak using REDMAN Whipping Top Cream.

    Lastly the blending of the strawberries is it blend till mushy (like you can see bits and pieces) or like almost liquid? I'm using a mixer on low speed to do that and it turns out quite watery

    I hope you can help me with these 2 areas and enlighten me :)

  23. Hi, can I substitute whipped cream with whipped evaporated milk instead? I know that whipped evaporated milk cannot hold for long but if it is used in your recipe, will it collapse too?
