Coconut Gelato

This is a quick method for making gelato...no ice-cream maker involved.



Ingredients:

3 egg yolks
100 gm. sugar
1 tsp. vanilla essence
250 ml. coconut milk (can use thick fresh coconut milk) - If you have Coco Lopez, it's even better

250 gm. Non dairy whipping cream

Method:

(1) Whisk egg yolks and sugar till white and creamy.
(2) Double boil the egg yolk mixture and stir constantly. Pour in coconut milk and continue stirring until coconut is hot but not boiling.
(3) Remove coconut milk mixture from heaat and set aside to cool.
(4) Whisk non dairy whipping cream till fluffy and fold in the cooled coconut milk.
(5) Pour into container and freeze overnight or until firm.

Note: Can add in some cream style cream corn.

Do u think if I want to do other variation from coconut gelato, e.g green tea, would it work if I change the coconut milk to fresh milk and add some green tea powder? Thanks :)

Yochana, which brand of non-dairy whipping cream do you use and where can I buy it ? What is the difference between non-dairy and dairy whipping cream ? Thanks a million.

Hi enthubake,

For non-dairy whipping cream, all brands are the same. I use Pride Topping / Value Pride.

Dairy Whip cream has 35% fat and they are more creamy and delicious.

Btw, like what May asked, if I replace the coconut cream with green tea powder & milk, will it be creamy? I want it to be creamy like this coconut gelato. What other kind of dairy products can I use? Thank you in advance.

I've not tried green tea yet but I think it should be nice.

Try black sesame seeds (blended).

I heed your suggestion and use Black sesame for my ice cream using your recipe. It was really really GOOD! Bravo & kudos to you!! I thought I wanted it to be more creamy, so i added some coconut cream into it and it tasted like black sesame coconut! Hahaha... I'll try again next time. aunty,
juz want to know that after adding in the whipped cream, we put the ice cream into the freezer and let it set till firm? do we need to bring it out to whip again and then let it freeze again? thanks.

no need lah.. but if you want to add in more aeration into the coconut ice-cream to make it light, you can take it out and whip it again then freeze it and serve.

Aunty, do we need to double boil the egg yolk mixture till it thickens? I din cook till it thickens. I made some last nite but it seems that there's ice when you eat it.

can we use whip topping to make this gelato? can u pls suggest what can i do with my whip topping aside from decorating cakes. coz i bought a wrong whip. instead of whipping cream, i got this one... are this the same aunty?

Hi Aunty,

It's red man brand, whip topping from PH(that was the only avail whip they got few days back) and i thought i got Whip cream hahaha, i'm so stupid coz i didn't check it...
may i ask if what's the difference of whip topping and whipping cream?

it's a 1L box, so i don't know what to do with it also... hay... pls help me :(

Im new to here as i just saw your blog today, was thinking of making this for family as it sounds easier to make than the others (Im a beginner in kitchen)Sorry to ask a question which i think it should be a very silly question, what is double boil the egg yolk mixture means? And also if i feel like making a chocolate type, is it possible to change some of the ingredients to make it out? Sorry for the silly questions. Thanks alot Aunty !

double boil - putting a pot into a bigger pot with some simmering hot water.

This is to prevent the egg yolks from getting cooked too fast.

You have to add in cocoa powder. Stir into the cooking liquid.

1) Is is poosible to add in mango flavouring (powder or liquid) in order to get mango ice-cream? How much should I add?

2) Is coconut milk a must? Can be replaced by fresh milk like HL? Just wondering if the taste is the same, as fresh milk is healthier.

Hi JJ,

Definitely you can sub with fresh milk. If you want to add in mango, just add in mango puree into the mixture. Proportion is up to you whether you like more milky or more mango.

dear aunty, i love coconut gelato, ice cream anything with coconut. thanks for posting this up.

i got a silly qn to ask about this recipe. do i need to buy those ice cream machine to do this one?

sun lik has this cheap ice cream machine. i was so tempted to buy but the cheap machine doesnt have condenser and i would need to put the bowl in the fridge for 36 hours. my freezer is at the bottom and it doesnt have space for that bowl.

so do i need machine or i can just pop the mixture into foam container and chill it overnight?

making ice cream using a machine takes several hours right?

aiyoh. aunty, you make it and post here, i can only salivate, go to 7-11 and buy cornetto at most.

ive been to ntuc and cold storage. none of them sell non-dairy whipping cream. looks like ive to go to sunlik or phoon huat. go there, cannot save money. sure buy more than what i need.

Just came back from phoon huat. spent $60, when all i wanted was just some non-dairy whipping cream.
Hahaha :)

i've put them mixture in the fridge to let it be firm. hopefully i can try some after dinner :)

i tasted it earlier and it was yummy, but a tad too sweet. the whipping topping from PH is already sweet. maybe i can cut down on the sugar next time. so excited. i cant wait :)
