Sesame Seed Soda Biscuits






Ingredients:

80 gm. water
1/4 tsp. Instant Yeast
1/4 tsp. salt
20 gm. sugar
1/4 tsp. Bicarbonate of Soda
180 gm. Plain flour
30 gm. Shortening
2 Tbsp. Black Sesame seeds
2 tbsp. White sesame seeds

Method:

(1) Mix instant yeast with water and stir till yeast dissolves.
(2) Add in sugar and the rest of the ingredients and knead till it combines into a dough. Rest dough for 5 to 10 mins.
(3) Roll dough thinly onto table top and cut into rectangular shapes of 1 1/2" by 2". Lay the rectangular dough onto a baking tray, prick top with a fork and bake at 170C for about 15 - 20 mins.

Hi sis,
Thanks very much for all your recipes. I have been a fan of your blog for a long time and I really enjoy looking at all the cake that you made. Do you have a bakery or what? Honestly, the cakes in a bakery are not as great as yours.

Your biscuits looks healthy. Can i don't use shortening but butter instead? Cos i seldom use shortening.

Hi Aimei,

yes you can use butter for this biscuits. You can also use 2/3 plain flour with 1/3 wholemeal flour if you like really healthy biscuits.

Aunty,
I made this biscuit last nite. Would like to know whether the biscuit will expand during resting and also during baking? I've forgotten to add in the soda so I only add it in after resting. Thanks!

Hi delia,

this cookie doesn't need a long rest and it will expand slightly to make the cookie flaky. You must let the cookie rest again after adding the baking soda. Dont overknead this cookie otherwise it will become rubbery and hard.

I've made a second batch of the biscuits but the results....i still prefer the first batch. I also don't know what happened. I follow the recipe to the t but my biscuit came out just like 'masuk angin'.

Mmm delia,

is your heat too high? Lower down your temp and bake a little longer to prevent "masuk angin".

Hello! is it possible to replace all the plain flour with wholemeal flour? cause i dont have plain flour at home. hee. & how abt veg oil replacing butter? will it taste weird?

Hi Koh,

Replacing all with wholemeal flour will make the biscuit very coarse and dry unless you use the organic wholemeal flour.
