Walnut Bread


Walnut bread


Ingredients:

350 gm. Bread flour
60 gm. sugar
1 1/2 tsp. instant yeast
1/2 tsp. salt
180 gm. fresh milk
1 no. egg yolk
1/2 Tbsp. coffee paste
50 gm. margarine

100 gm. walnuts
80 gm. raisins

For glazing: 1 egg - lightly beaten

for topping: some white sesame seeds

Method:

(1) Mix all the dry ingredients into a mixing bowl and mix for 2 mins. before pouring in the fresh milk and egg yolk.
(2) Pour in fresh milk and egg yolk and beat for 10 mins.
(3) Add in margarine and coffee paste and beat for another 5 mins. Laastly add in walnuts and raisins and let it mix lightly till combined.
(4) Remove dough from mixer, roll into a round ball and let it rest for 45 mins.
(5) Divide dought into 3 pcs. Roll into round balls and leave to rest for 10 mins.
(6) Roll the round dough with a rolling pin flat and then cut 6 slits on the dough.
(7) Leave dough to proof again for another 45 mins or till double in size.
(8) Glaze buns with beaten egg and sprinkle sesame seeds on top.
(9) Bake at 180C for about 20 - 25 mins.
(10) Leave onto wire rack to let it cool.

Chestnut Cake





Ingredients for chocolate cake:

4 nos. eggs
120 gm. sugar
100 gm. cake flour
20 gm. cocoa powder
a pinch of salt
60 gm. cornoil

chestnut filling:

100 gm. canned chestnut puree
80 gm. non-dairy whipping cream
a little rum

Decoration:

1 chocolate transfer
100 gm. melted chocolate
some boiled chestnuts

Method:

(1) For cake: whisk eggs and sugar till thick.
(2) Fold in flour, cocoa powder and cornoil and then pour into a 7" round cake tin.
(3) Bake at 175C for about 35 mins.
(4) Remove cake from oven, leave to cool on a wire rack and then slice into 3 slices.
(5) For filling: stir chestnut puree with whipping cream and rum and sandwich the 3 layers of chocolate sponge cake together, leaving some chestnut filling for the top layer.
(6) For top layer, use a grass nozzle to pipe the chestnut on top. Chill for a while.
(7) Cut the transfer sheet according to the height of the cake. Melt some chocolate and pour over the transfer then lift it up and stick to the side of the creamed cake. Leave it in the fridge for the chocolate to harden and then tear out the transfer sheet.
(8) Place some chestnuts on top of the piped chestnut filling and then sieve some icing sugar on top.
(9) Slice and serve chilled.

Fried Sesame Balls

This is also called "Open Mouth Laugh"



Ingredients:

300 gm. plain flour
150 gm. sugar
30 gm. shortening
1 no. egg
1 1/2 tsp. baking powder
50 ml water
1/4 tsp. Bicarbonate of Soda
some sesame seeds for coating

Method:

(1) Sift plain flour, soda bicarbonate and baking powder together.
(2) Stir in water, egg and castor sugar till it becomes a dough. Rest dough for 20 mins.
(3) Roll dough into round balls and roll into sesame seeds.
(4) Deep fry in hot oil till golden brown.

Japanese Cheese Cake




Ingredients:

250 gm. cream cheese
30 gm. sugar
2 egg yolks
20 gm. cake flour
30 gm. cornflour
30 gm. fresh milk
30 gm. butter
2 egg white
70 gm. castor sugar
30 gm. lemon juice
1 lemon zest

Method:

(1) Beat cream cheese with 30 gm. sugar till creamy.
(2) Add in egg yolk into the mixture , one at a time.
(3) Heat milk and melted butter over microwave and add into the cheese mixture. Add in lemon juice and lemon zest.
(4) Sift in flour and cornflour into cheese mixture and mix till well combined.
(5) Whisk egg white with 70 gm. sugar till thick and then fold into cheese mixture.
(6) Pour mixtur into a 6" round springform tin, wrapped with aluminium foild and steam bake (baine marie) in oven at 160C for about 60 mins.
(7) Leave cake to cool in oven before removing.
(8) Chill in the fridge before slicing.
(9) Slice and serve. Enjoy...
